I just want to make sure I understand the rules correctly: simply being the son (or daughter) of a nobleman does NOT make you titled, correct? You are only considered titled when you have earned a noble rank of your own (or are a nobleman as the result of being an orphaned firstborn child of a nobleman).

That's correct.
You're noble, not titled. (As long as you're legitimate)
Nobles - Can court Noble Mistresses and there's a handful of positions where it matters like the Dominicans.
Titled - Can apply for appointments where Titles are required.

If the titled father dies and you are the first born, inheriting the title "should" happen.

If the titled father dies and you are the first born, inheriting the title "should" happen. That is indeed the case, although no character has had that happen yet. (It's a 1 in 36 chance so that's not surprising).
