I am looking to maybe become a priest in game can any one give me a idea of how to go about this?

Not that I am a nexpert o nclerical rules, as I've never had too much interest on them, but I'll try (and wither Sam or Garret will fix any missunderstanding):
To me, the most relevant part is the first sentence in 18.2:
So, as long as your character is SL 3+) if you intend to start your character as a priest, you don't need to endure all the Student of Theology part ,taht would take you he best part of a year (at least).
Once you're ordained, you must join an order. That woks more or less as entering a Regiment ,acording the table at the end of 18.6.
If you enter, you become a priest, and from there you can raise as vacants appear and as appointments. Each rank has some weeks to dedicate to religious duties (I understand a mass), can give some sermons praising (or attacking) someone, etc...
There are many more details, all quite well explained in the whole chapter 18 of the rules (as money earned, effects of players assisiting any mass celebrated by a player PC, etc.).

OK so do I just I apply to become a priest or do I need to specify a religion and a parish? It seems unclear in the rules

If your character is at least SL 3 you may begin as an Ordained Priest. So the rules about Students of Theology do not then apply - your character has already done this.
So you choose your Clerical Order. This is important and the choice will likely be limited by your SL, and how your see your character.
You will need to join a diocese (18.13) A starting PC priest will roll in order for all dioceses without penalty for failed rolls. Presumably this is in the first turn, but may be part of Applications process, in which case you would need to simply to announce that you are starting as a Priest, of which Order, and that you will seek a Diocese.
As an Ordained Priest you will spend half each month doing religious duties, probably in varied parishes (within the Diocese) during the year, and ideally will seek to rise to higher ranks and maybe one day get your own Parish, or even Bishopric.
If you go for a Protestant then Hans will apply Influence to get you into your preferred Diocese, though Hans is not high in the Greasy Pole!

I understand from them that you must apply for an order, but will be made a priest in a parrish (I guess wich one will depend on your SL, as you cannot expect to be made a parrish in Ille de la Citée i you're SL3, nor will you be sent to a parrish in Passy if you're SL9).
See that when chooseing an order, you're choosing a confession too (Hugenots are protestant/Calvinist, otherwhise your Roman Catholic)

You apply for a Diocese...
As an Ordained Priest you will spend 2 weeks in duties.
You choose what to do for the other 2 weeks.. and which weeks. There's an Open invitation for Week 1 for a Baptism... which will get you a lot of SP. The other week - it's up to you.
You can join a Club, and it's probably a good idea to do so.
It's too late now, but you can apply for a Promotion or Appointment next month. I think the only appointment you will be able to apply for is Regimental Chaplain, though as you rise in clerical rank more appointments will be available.

thank you for the missive, I would be delighted to attend the theatre in week 1. As to the races I have already pledgeed to attnd the batism of The Grand Duc and Duchess de Chevreuse Heir, however I am sure we can meet up in the near future and go over old times, it is nice to hear from such a familar name here.
